Not long after I moved to Colorado in 2010, I was introduced to green chile at 27-year-old Efrain’s of Boulder. It was meaty. It was complex. It was red? And it was spicy. I haven’t stopped craving it since. That experience defined the regional specialty for my palate, just as La Loma’s pea-hued version has for so many Denver diners over the decades. So the panic over yesterday’s news that two of its locations were losing the La Loma name is understandable—would the beloved green chile recipe also go away at the downtown and Castle Rock restaurants?
